How To Clean Trout

Headless
          - Slit from anal opening to the gills
          - Cut esophagus, grab the viscera and pull out the insides
          - Scrape with the back of your thumb the dark line at top of cavity that serves
            as the trout's kidney
          - Cut Head off just behind the lateral fins by the gulls
With the Head on
          - Make slit from the alnal opening as far into the V between
            the gills as the knife will go
          - Make slit underneath form gill to gill
          - Grab palate with thumb and forefinger and pull down and
            to the back. All the viscera will come out in one hunk
          - Scrape with the back of your thumb the dark line at to of cavity that serves
            as the trout's kidney
          - Head remains attached by the top and backbone
